Steak Dianne is a dish people assume they have to miss out on when switching to a healthier lifestyle. This simple and delicious recipe demonstrates how replacing a few ingredients for a healthier alternatives can create an equally delicious favorite without the added calories.

Ingredients

  • Pepper

  • 2 X 140g Lean Beef Eye Fillets

  • Cajun Spice M

  • 200ml Light Coconut Cream

  • 1 Tablespoon Worcestershire Sauce

  • 1 teaspoon Dijon Mustard

  • 2 Cloves Garlic

  • 1 Tablespoon Parsley

  • 1 Cup Mushrooms

  • 1 Bunch Broccolini

  • 1 Bundle Asparagus

  • 2 Cups Cauliflower


Method

  1. Place cauliflower into boiling water & cook until soft.

  2. Meanwhile season steak with pepper & seal both sides in a non-stick frying pan over high heat for approx. 2 mins each side (for thick steaks med rare). Remove steaks & turn hot plate down to medium heat. Rub Cajun spice mix into steak onto both sides.

  3. Add broccolini & asparagus to the pan with the steak & cook steaks for a further 3 mins on each side or until medium rare. Remove from pan & rest under a sheet of foil.

  4. Using the same pan as you cooked the steak in, add the cream, Worcestershire sauce, Dijon mustard, garlic, parsley & a dash of pepper. Simmer whilst stirring for 1 min. Add mushrooms & simmer for a further 2 mins.

  5. Drain cauliflower, add 1 Tablespoon of coconut milk & blend until you have a smooth puree.

  6. Place puree on plate with steak on top. Drizzle over sauce & serve with vegetables.
