Ingredients
  • 2 Eggs

  • 2 Slices of Wholemeal Bread

  • 60g Avocado

  • 1 Pinch of Pepper

  • 80g of Baby Spinach

  • 1/4 Cup Vinegar

Method

Bring pot of water to the boil & add vinegar.


Stir water slowly & gently add egg.


Cook toast whilst egg is cooking & spread with avocado. 


Remove egg & place on toast. Sprinkle with black pepper & place spinach leaves on top.
